Experience the ways nutrient-dense food is grown, learn about soil health with real professionals, and even experience the food with top-notch chefs.

About Our Content

Gary Zimmer and Leilani Zimmer Durand are consultants with decades of experience helping farmers regenerate their land around the world. From fertilizer bays to in-field compost mixing to carbon storage to soil testing, they will demonstrate the parts of their growing system that have made their Otter Creek Farm in Lone Creek, Wisconsin, a showpiece for how to adapt in today’s rapidly changing agriculture industry. Plus, walk a new 180-acre property they are just starting to transition to regenerative practices, and learn from special guests they bring in every year. They are also the co-authors of The Biological Farmer and Advancing Biological Farming.

The Savanna Institute is a 501(c)(3) nonprofit organization that works with farmers and scientists to lay the groundwork for widespread agroforestry adoption in the Midwest US. Inspired by the native savanna ecosystems that once covered much of this region, the Savanna Institute conducts research, education, and outreach to support the growth of diverse, perennial agroecosystems.

Canopy Farm Management provides tree planting and management services to farmers and landowners in the Midwest. Canopy establishes perennial crops, timber plantings, conservation practices, and integrated agroforestry systems. They combine expert staff, thoughtful design, and a mobile fleet of state-of-the-art farm equipment to cost-effectively establish and manage profitable, diverse, and resilient agroecological systems.

Canopy launched in 2022 in close partnership with the Savanna Institute. They continue to work closely with the Savanna Institute to ensure that their work leverages the latest science, state-of-the-art methods, and the most advanced tree genetics.
